You must be able to gauge your clientele very well, so you know what their tastes are and what their level of wine sophistication is. It’s important to know these things, so you don’t overbuy, and have wine sitting on your shelf.
Do you want to offer wine by the glass. What is the pricing structure? Old world? New world? Do you want a predominantly Italian list? French? Domestic?
There are over 10,000 different kinds of wine to choose from. Yes… that’s 10,000. Where do you begin? You begin with knowing your customer. Sell the wine that they want to see. The rule is… if you can sell a case in a month, it might be a good decision to buy.
